Quick recipe: Seasoned bean enchiladas

Ingredients: 8 small tortillas, 2 cups cooked beans, 1 cup tomato sauce, 2 teaspoons Enchilada Seasoning, and 1/2 cup shredded cheese if desired.

Method: Mix beans with half the seasoning, roll in tortillas, and cover with sauce mixed with the rest. Bake at 375°F for about 20 minutes until hot.
