Chop Bacon into small pieces and brown in large pot. Remove bacon bits and store in separate dish but retain rendered bacon fat in pan.
Chop beef into small ¾ inch cubes and season with sea salt (lightly), black pepper, and granulated onion.
In a same pot used to fry bacon, add the brisket cubes in small batches over medium-high heat until each side of beef cube is seared with a nice, caramelized surface. Remove from pot when finished.
Chop about 2 Cups of onion and add to same pot. Add the garlic, chili powder, cumin, and granulated onion. Cook for 2-3 minutes until fragrant.
In the same pot, stir in the seared beef, the bacon pieces, the beef broth, crushed tomatoes, and coffee. Bring to a boil, then reduce heat to low and simmer for 3-4 hours, stirring occasionally.
