3 Lbs. Boneless Leg of Lamb

1 tsp. Chipotle Sea Salt

1 tsp. Black Pepper

2 Tbs. Original Chicken Seasoning
Directions
Preheat smoker to 225°F.
Season leg of lamb with chipotle sea salt, black pepper, and chicken seasoning on all sides.
Place lamb in smoker skin side up and cook for 30 minutes per pound or until internal temperature reaches approximately 140°F
Remove from smoker, quickly wrap in aluminum foil, and let rest for 30 minutes before slicing. Internal temperature should rise to 145°F for medium-rare while resting
